Honeycomb Candy

This is a fun recipe. Not only does making it mean that you can create Honeycomb Crunchy Caramel, but there's a bit of wizardry involved. Transforming simple caramel into a puffy candy brings a lot satisfaction. Once you get the hang of it, it is actually quite easy to make, although it requires vigilance since caramel burns easily.
It is important that you take due care when making this especially if there are children around, as sugar gets extremely hot. When you add the baking soda, it can splatter, so use a pan with high sides and don't allow yourself to get distracted.

Ingredients 

- 400g sugar
- 100ml water
- 40ml golden syrup (about 2 tablespoons)
- 1 tablespoon baking (bread) soda

What to do

1. Butter a medium-sized baking dish.
2. Sift the bread soda (using a fine sieve).
3. Combine the water, golden syrup and sugar and cook over medium heat without stirring until the sugar dissolves.
4. Turn up the heat until the mixture becomes a golden amber colour (as in the photo), stirring if it cooks unevenly.
5. Once the caramel is ready, take it off the heat.
6. Stir in the baking soda, until it is fully combined, but don't over mix! It will froth up and more than triple in volume.
7. Immediately pour out into the baking dish.
8. Don't stir or manipulate or it will start to collapse.
9. Allow to cool fully.
10. Break into pieces and enjoy!.
